Removing pin bones from fish

The small pin bones found in salmon, halibut, and other types of fish fillets should be removed before cooking. Lay the fillet skin side down and run a fingertip along the seams to locate the bones. Using fish tweezers or needle-nosed pliers, pull the bones out one by one, gripping the tip of each bone and pulling up diagonally.
