Storing shellfish

Store live shellfish such as clams or mussels in a bowl and cover with a damp towel. Because they need air to survive, never wrap live shellfish tightly or submerge them in water. Shrimp (prawns) should be stored in a resealable plastic bag on a bed of ice. As with fish, try to use shellfish within a day of purchasing for the best flavor and texture.
