Many markets now offer free-range and organic poultry. In general, a free-range bird has been raised in uncrowded conditions and allowed access to the outdoors. Organic poultry has been fed a diet of organically grown feed and has not been treated with antibiotics or hormones. Experiment with the different types of poultry available, such as kosher, organic, heritage breeds, and free range, and buy what tastes best to you.
