Refrigerate fresh poultry in the coolest part of the refrigerator for up to 48 hours after purchase. If the poultry has an unpleasant odor when the package is opened, don’t panic, as it may be a result of oxygen depletion. Rinse the bird under cold water and pat dry with paper towels. If the odor is still unpleasant after the bird has been exposed to air for 5 minutes, discard the bird (or return it to the market if very recently purchased).
