Store meat in its wrapper and in the coldest part of the refrigerator, usually at the back of the bottom shelf or in a meat drawer. If any juices are seeping from the packaging, wrap the package in a layer of plastic wrap. Do not unwrap meat until just before cooking; unnecessary exposure to air can add to deterioration.
