Mixing ingredients together vigorously until they are smooth and thoroughly amalgamated is called beating. It’s also the term used for whipping air into heavy (double) cream or egg whites. Egg whites and cream can be beaten with a whisk, a handheld electric mixer, or the whip attachment on a stand mixer.
