Why love it
Cinnamon’s versatility meant it was the baker’s spice before vanilla entered the game. It introduces complexity, a warm base note and, whilst not sweet in itself, it reads as such because it enhances the sweetness of its partners. Cassia bark, often used in its stead, is more intense with a note of astringency. Cassia buds (the dried, unripe flowers) have a floral, peppery bite.
