Caraway

With both powerful liquorice notes and warm orangey spice, caraway is much used in Eastern European baking and combines harmoniously with rye.

Seeds are often used whole for an earthy anise crunch. Toast before use to amp it up. If using ground, use a smaller quantity and add later in cooking.
