Often referred to as the ‘vanilla of Asia’, pandan leaves lend a sweet, grassy subtlety.
Match with

Nut: coconut

Sweet fruit: banana, pineapple, mango

Tart fruit: passion fruit, lime

Spice & herb: cinnamon, cardamom, clove, nutmeg, lemongrass, lime leaf, ginger, turmeric

Sweet: palm sugar

Extract the flavour
Scrunch and knot fresh or frozen leaves and add early to infuse. Blend for a stronger flavour and an intriguing green tint. You can also buy pandan extracts, which may or may not be coloured a deep forest green.
