Why love it
There is a generous quantity of lemon-scented oils held deep within the stem. Try poaching fruit with bruised lemongrass in place of citrus zest.

Extract the flavour
For long cooking, bruise the stem, tie in a knot to expose the fragrant oils, and toss in the pot. For quicker release, slice or pound to a paste - but do keep the cooking quick or the flavour will be lost.
