Why love it
The tart, fruity brightness of sumac can lift a flat dish and cut sweetness. Like salt, it will enhance the flavours of food it is added to.
Match with

Nut: pistachio

Sweet fruit: strawberry, cherry, fig

Tart fruit: pomegranate, lemon, grapefruit

Spice & herb: sesame, rose, orange blossom, vanilla, saffron, mint

Sweet: date syrup, brown sugar

Extract the flavour
Use at the end for maximum effect. Sumac doesn’t need cooking, so the ground berries can be sprinkled over food as a finisher.
