  • About
Why love it
The rasping heat of the raw rhizome is intensified when dried and ground, but lessened again by cooking, leaving warmth that can be layered by using ginger in multiple forms.
Match with

Bean: chocolate, coffee

Nut: almond, hazelnut

Sweet fruit: apricot, melon, mango, apple

Tart fruit: rhubarb, lime, lemon, orange

Spice & herb: pepper, cinnamon, cardamom, clove, chilli, turmeric, mint, vanilla

Sweet: treacle, date syrup, honey, maple syrup, malt syrup, caramel, palm sugar

Extract the flavour
Buy ginger both fresh, and ready ground. The two ingredients have different qualities and are lovely married together. (And do try peeling fresh ginger with a teaspoon, a revelation!)
