Why love it
Chilli heat adds an extra dimension on the palate that can be balanced with sweet, salty and sour for exciting, rounded dishes. When dried, a sweet smokiness is amplified.
Different varieties offer different heat, fruitiness and complexity. For instance, pasilla is richly raisin-like whilst ancho is sweet and earthy.
