Baking relies on a careful calibration of protein, acidity, moisture and leavening. Other than flavour switches or playing with additions such as dried fruits or chocolate chips, I don’t recommend making key ingredient substitutions. Different flours vary in gluten levels; butter spreads have a high water percentage; sugars don’t all behave the same. All these will impact the texture of your bakes.
