Cakes are best kept covered at room temperature. If you have added cream or another perishable filling, store in the fridge but bring out a few hours before serving. Plain cakes can also be frozen, tightly wrapped, and defrosted before use. Keep biscuits crisp in an airtight tin, or here is a tip for something squidgy like a cookie: add a slice of bread to the tin with them. The bread will dry out and the cookies will stay soft and sumptuous.
