Remove some of the fat from the flap meat. This is a very flavorful cut that’s perfect for grilling.

Trim off some of the fat from the flap meat.

Remove the sinew from the lower part; you can see all the beautiful grain in this cut. After cooking, be sure to slice against the grain.
