  • About

White Truffle with Pasta. This picture was taken at the restaurant of Antonio Carluccio, king of the white truffle.

Tuber magnatum Not found in the British Isles. It is the favourite of the Italians and is found in northern Italy. It can be as large as 15 cm (6 in) across. Considered, especially by Italians, to be the best truffle in the world. Very expensive, but available in markets and specialist shops in northern Italy.

Antonio Carluccio, the undisputed king of the white truffle, served them in the simplest way at his restaurant, just thin shavings of white truffle added to simple pasta or fried eggs.
