Thymus druicei or Thymus serpyllum Wild thyme is common throughout the British Isles on dry grasslands, heaths, dunes, screes and among rocks. It flowers from May until August.
Thyme is my favourite herb. It makes an excellent addition to roasting meat – chicken, heart and especially liver – and gives a nice strong flavour to a herb omelette. Most mushroom dishes benefit from it, as do salad dressings and vinegar. Wild thyme when found in Britain is rather mild in flavour compared with cultivated forms, or indeed, with the wild thyme found around the Mediterranean, so remember to be lavish with it. A tea can be made with the leaves of thyme which is good for colds and throat complaints.
