ion exchange, chemical process used in, for example, water softening which has useful applications in winemaking, particularly for tartrate stabilization, but it has the serious disadvantage of increasing the sodium content of wine and may also alter the taste and aroma of wines. Its use is permitted in most winemaking countries but is strictly regulated.
