L’Étoile, small appellation in the jura region of eastern France which specializes in traditional, oxidative white wines aged in non topped-up barrels. These are often pure Chardonnay but may be Chardonnay blended with the local savagnin grape. It also produces vin de paille, crémant du jura, and the extraordinarily nutty vin jaune. Historically l’Étoile was known for sparkling wines, which today are sold as crémant du Jura.
