pumps, mechanical devices for pumping, moving liquids such as wine and suspensions of solids such as grape juice from one location to another. Pumps are avoided by some of the most traditional—and some of the most modern (see winery design)—wineries that depend on gravity to move liquid from one level to another for different winemaking processes.

must from the crusher-destemmer is usually moved to the draining tank or fermentation vessel by means of a peristaltic or off-centre helical screw-type pump because this type performs particularly well with solid suspensions. Cloudy juice from the draining tank might well be moved by means of a rotor pump to the fermentation tank, and most of the semi-clear and clear wines being processed are also moved using these types of pump at any step of the winemaking process.
