Sacy, white grape variety once widely grown in the Yonne département. Its productivity is its chief attribute, its acidity the wine’s most noticeable characteristic. This has been used to reasonable effect by the producers of sparkling wines, and the variety, also called Tressallier, is still (just) grown as an ingredient in the white wines of st-pourçain.
