Soak a pinch of saffron in 1 tablespoon warm milk. Stir into 250g (1 cup) thick Greek-style yoghurt with 2½ tablespoons icing (confectioners’) sugar and the ground seeds of 2 green cardamom pods.

Match with: spiced cakes or fresh mango
