Jamu are Javanese tonics ascribed with many health-bringing qualities and this one has a lovely, cola-like taste. In a pan, combine 2 tablespoons tamarind paste (I use a lighter, less concentrated one), a thumb of fresh turmeric, chopped, 3 scrunched lime leaves, 1 knotted pandan leaf, 50g (134oz) dark palm sugar and a pinch of salt. Add 750ml (3 cups) water, cover and bring to the boil slowly, then simmer for 10 minutes. Strain, cool and serve over ice.
