Sweet, sour, spicy. In a 500ml (17fl oz) sterilised jar, combine 10g (¼ oz) finely chopped ginger, ½ teaspoon finely chopped fresh turmeric, 2 tablespoons apple cider vinegar, 1 teaspoon lemon juice and 1½ tablespoons honey. Muddle well then top up with water, leaving about a 3cm (1½ inch) space at the top of the jar. Seal, infuse overnight then refrigerate. Strain before drinking.
