Capture the citrusy notes of Australian lemon myrtle. Dissolve 200g (7oz) sugar in 240ml (1 cup) rice vinegar over a medium heat. Add 1 tablespoon dried lemon myrtle leaves then leave to cool and infuse for 30 minutes. Strain. Serve over ice as a nip, or with cucumber and mint topped up with sparkling water.
