Gahwa is the ultimate display of Arabic hospitality. In a pan, add 1 heaped tablespoon finely ground coffee for each cup of water. Simmer for 5 minutes then stir in ¼ teaspoon ground cardamom and 1 teaspoon sugar per cup. A strand or two of saffron is optional. Pour, then leave the grounds to settle for 5 minutes before drinking, perhaps alongside some dates.
