Subtlety is lost on me - here is Indian chai masala for six at full throttle. Put 1 tablespoon minced ginger, 6 bruised green cardamom pods, 1 bruised black cardamom pod, 2 cloves, 1 long pepper and ½ cinnamon stick in a pan with 500ml (2 cups) water. Bring to the boil and simmer for 5 minutes. Add 1 tablespoon Assam tea and 2 tablespoons sugar and heat for a further 2 minutes. Add 250ml (1 cup) milk, simmer for 10 minutes, then strain and serve.
