Dice watermelon and splash with sambuca and fresh lemon juice. Toss with a sprinkling of sugar, a good scrunch of salt and an optional sliced chilli. Chill in the fridge for about an hour to let fruit soak up the anise-scented liquor. Serve cold, strewn with freshly chopped mint.
