Poached fruit

The perfect way to put unusual spices to use. Add a scattering to the poaching liquor but don’t be aggressive here - you want to enhance not overwhelm the delicacy of the fruit. Try verbena berries with rhubarb, passion berries with apples, long pepper with plums, or cassia buds with pears.
