Chinese celery is smaller, crunchier, and more flavorful, with a strong peppery bite packed into thin, fibrous stalks, as if a stalk of conventional celery were drained of 50 percent of its water and compressed. In all the recipes in this book, Chinese celery is preferred, but only absolutely necessary when noted.
