Puffed potato chips
7 centimeters by 3 millimeters (2¾ inches by ⅛ inch)
Pommes de Terre: Soufflées
Trimmed square, cut one eighth of an inch thick, put in a moderately hot fat until partly cooked, strain, then plunge into them another clean hot fat to effect the puffing. Let dry and strain.
Pommes de Terre: Nid (au) (A)
Pommes Soufflées, dressed in a nest made with straw potatoes, in a special nest mould (Basket), fry in deep fat.
Pommes de Terre: Chatouillard
Cut in ribbons, cooked the same way as Pommes Soufflées.
