When small, young and juicy, this vegetable makes a very excellent addition to winter salads, and may easily be converted into an economical and quickly-made pickle. Beetroot is more often served cold than hot; when served hot it should be served with sour-sweet sauce or melted butter.

Beetroot is obtainable throughout the year.
