  • Salsas add that final hit of freshness and color. They should always be well seasoned and powerfully flavored.
  • Always offer a couple of tomato or chile salsas, one hot and one mild, and a creamy-textured pureed sauce such as Avocado Cilantro Sauce or Chipotle Salsa to add moisture.
  • Acidic salsas, such as Salsa Verde made with tomatillos, are essential with rich meats like pork and tongue.
  • Garnishes add crunch, color, and yet another shot of flavor. Typical garnishes might include: Diced white onions (sometimes mixed with chopped cilantro, cilantro sprigs, cut limes, kosher salt, radishes, pickled onions and jalapeño, Bottled hot sauce (Salsa Huichol or Salsa Amor)
