Right in the heart of Almería’s main cluster of tapas bars, or taverns, is this relatively young addition, its name meaning “our land”. And the tapas here really are about showcasing the products of the province. The agricultural history of this arid corner of Spain has long been checkered, although everything changed in the 1970s when acres of plastic greenhouses started to proliferate Diego Ferrón, the tavern manager, explains, “Almería is known for a survival diet due to its extensive desert”. The basic dish of migas (fried breadcrumbs or flour), for example, has long been a staple.
