Any meal must have a good balance of different kinds of food.
Pasta can be a first course, as it generally is in Italy, or a main – and only – course. This ‘one-course meal’ has become very popular nowadays. The English and the Americans were, in fact, the first people to eat pasta as a single course, often accompanied by a salad. This combination is not at all Italian. In Italy the salad would never be eaten with the pasta, but after.

If you serve pasta as a first course, the rest of the meal should be light and different from the sauce of the pasta, although not strongly contrasting with it. Let me give you an example. After a steaming bowl of bucatini alla carbonara, a dish of mixed roast vegetables or some fillets of sole braised in wine would be perfect, as would a few slices of prosciutto or ham and salad.
