It is not difficult to cook pasta well, but it does require some care. Gli spaghetti amano la compagnia – spaghetti loves company! Never leave the kitchen while the pasta is cooking: it can’t take care of itself. The timing is crucial, and just 2 minutes more or less can spoil a dish that in every other way is perfect. The best way to test whether the pasta is cooked is to take some out and have a bite.

1_Use a large saucepan in which to boil the water. The best shape is a deep cylinder, which allows the water to come back to the boil quickly after the pasta is added and keep boiling fast, which is essential for achieving a good result.
