There are dozens upon dozens of useful bread baking books on the market; however, after looking through and using dozens upon dozens of them myself, these are my all-time favorites. Not only do they provide great recipes, but they explain a lot about technique:

Bread: A Baker’s Book of Techniques and Recipes by Jeffrey Hamelman

This is the bible of bread baking from a master baker and the head of the King Arthur Flour Bakery. It’s an advanced book—PhD-level material—which makes it a great reference guide for someone who has a thorough grasp on the bread-baking process. If I had to pick one book to have on my shelf at all times, this would be it.
