Those of us who live in major cities are fortunate to never be too far away from a well-stocked Mexican supermarket. In many cities, there are still many small Mexican corner tienditas where you can also find a lot of the staples needed for an asada. Sometimes, a small Mexican market may have better quality or certain harder-to-find ingredients. I’ve gone to a supermarket for some items and a tiendita for other things. You can find any dried chile featured in this book and so many more obscure ones to experiment with online. If looking in a non-Mexican supermarket, the dried chiles are usually in the spice section.
