I got my first baking job by chance. I was a passionate home baker with no professional experience whatsoever, but Fiona Pratt, who owns Bibi’s Bakery in Edinburgh, took a huge chance hiring me and I owe such a lot to her. I’m pretty sure if I hadn’t met Douglas and moved to the Highlands, I’d still be at Bibi’s. What I know about quality, never cutting corners and giving people a chance, I learned from Fiona.
