We use our stand mixers to make most of our cakes, and there’s no doubt that they — or hand-held electric mixers — make life much easier. However, with the exception of just one or two recipes you can make everything in the book with a spoon, a bowl and a bit of elbow grease. If it needs to be made in a mixer, it will say in a note at the start of a recipe.
We never use a stick blender for our cake recipes and very, very occasionally might use a processor, but you’ll always manage without.
