Zingerman’s Bakehouse, our first book, was written by me and Frank Carollo, my partner in the bakery and its founder. Frank retired on December 31, 2020 (as he had planned before the pandemic started; we like to stay on schedule at the bakery). I had no desire to write a new book alone, and, as it turned out, I didn’t have to. A group of four of us had already gathered to write the cookbooklets and we thought we could engage with others in the bakery to accomplish our goal. Our normal practice in the bakery is to collaborate in teams and co-create, so that’s what we did here. Four of us led the project and worked with our bakers and class instructors to write the book, and a team of Bakehouse staff and home bakers tested all the recipes.
