A critical goal of our book is to supply recipes that make it possible for home bakers to develop baking skills and to be able to create well-prepared baked items on their own. The recipes include the traditional techniques used by artisanal bakers as well as all the “secrets” we’ve learned over the years through attention and repetition. We are as dedicated to using full-flavored ingredients as we are to technique, and we advise about ingredient choices and recommend sources within the recipes. We also share our newest focus on the flavor and nutritional benefits of using freshly milled whole grains. Sometimes the recipes look long; that’s because we want to make sure we’ve given you thorough instruction. It doesn’t mean that they’re difficult to make.
