The nut cake layers are meant to be used as components of more elaborate cakes, though they are also excellent as plain cakes with just a dusting of confectioners’ sugar. The following nut cakes, the gugelhupf and the financier, are Viennese and French versions of a rich nut cake to serve as a coffee cake, or as a dessert for a very casual meal.
