I have taken steps to test these recipes in an apartment with standard equipment in order to produce the best real-world results. This doesn’t mean you now have license to be careless; it just means that I’ve tried to limit your margin for error to a manageable level. I used an oven with a convection feature, which many homes have these days. I have also laid out the recipes in grams because cup measurements are inconsistent. I only use grams because it is the most accurate method for weighing out your mise en place. Smile, laugh, and put love into everything you do in the kitchen. The results will always taste better.
