Federal, state, and local government regulations attempt to ensure the wholesomeness of food that reaches the public. Any new food-service business should contact the local health department well in advance of opening to ascertain the necessary legal requirements. A professional chef moving to a new area to work should contact local authorities for ordinances specific to that area. Some states and local jurisdictions offer sanitation certification programs. Certification is also available through certain academic institutions.
