Most of the salads I’ve included in this section are South-East Asian inspired. They’re dead easy, bloody delicious and incredibly flexible. And, just as importantly, they are great to have in the middle of your shared table, already prepared and ready to serve as you’re plating your other dishes. For example, you could have steamed rice, a salad, something straight off the steamer, a braise or a curry and, at the last minute, a stir-fry — how easy would that be? Remember that the balance of a meal is not only to do with the flavour and texture of the food, but also in your ability to enjoy getting it out of the kitchen.
