I love noodles as much as I love pasta and rice (so if I ever have to go on a no-carbs diet, just shoot me!). I adore fresh noodles, but even a packet of dried noodles in the pantry can be the base of a really great, quick meal.
Just the other day I stir-fried cabbage and carrot, flavoured the oil with ginger and garlic, added the cabbage and carrot back to the wok and splashed in some shaoxing, soy sauce, a pinch of sugar, water, sesame oil and a good hit of chilli oil. I poured the whole lot over egg noodles that I’d blanched for two minutes and presto — a great satisfying quick dinner. What a happy way to spend Sunday night in front of the TV
