Once your barbecue drops below 140°F (60°C) (safe temperature), you must eat or refrigerate it within two hours. If the environmental temperature is 90°F or above, this safe zone drops to one hour. Transfer the leftover barbecue to shallow containers so it chills faster, and store it in the refrigerator for three to four days or the freezer for three months. Place the leftovers in airtight containers or sealed freezer bags with as much air pressed out as possible. If the meat is vacuum-sealed, it will keep in the freezer for up to two years.
