Since I First Started cooking in my backyard, I’ve smoked everything I could get my hands on to test the science behind savory, sweet, spicy, and smoky—including desserts. One of the first things I cooked on a kettle smoker was a lemon blueberry cobbler, and it was an instant hit with friends and family. But not everything works with smoke. In fact, some desserts best complement smoked meats because they have no smoke profile whatsoever.
